Vanilla Cupcake Recipe
Ingredients
• 2 cups all purpose flour
• 1 1/2 cups sugar
• 3 teaspoons baking powder
• 1/2 teaspoon salt
• 4 egg whites from large eggs
• 1/2 cup shortening
• 1 cup 2% milk
• 2 large eggs

Vanilla Cupcake Recipe Directions
1. Preheat oven to 350 degrees.
2. Line cupcake pans with paper liners.
3. Combine flour, sugar, baking powder, salt, shortening, milk and vanilla in a large mixing bowl.

4. Mix at low speed for 2 minutes. Scrape bowl.
5. Add egg whites and mix at high speed until fluffy and smooth, approximately 2 minutes.
6. Fill liners 1/2 to 2/3 full of batter. Do not overfill. Bake 20 to 25 minutes or until toothpick inserted in center comes out clean.
7. Cool 10 minutes in pans then remove from pan, and place on wire racks to cool completely.
8. Frost and decorate your vanilla cupcakes as desired.

Meringue Icing
I used meringue icing for this vanilla cupcake. You can make a meringue icing by mixing egg whites, confectioners sugar and cream of tartar.
For every egg white, you'll mix 1/4 cup of confectioners sugar.
And then whisk everything in a bowl. But it would take a very long time if you'll whisk it by hand so better use an electric mixer until it is fluffy.
You'll know that it is done if you turn the bowl upside down and no icing dropped from bowl.
Cream Cheese Frosting
This frosting is perfect for the carrot cake. (my favorite cake)
To make a cream cheese frosting you must mix, 8 ounces of cream cheese 1/2 softened butter, 2 cups of shifted confectioners sugar and 1 teaspoon of vanilla extract.
